Cooking Chamber Size
Once you’ve locked in temperature control, you’ve got to ask yourself: will my brisket actually fit?
Cooking chamber size matters more than you’d think. I’ve wrestled with briskets that poked against walls, or worse, I had to split a beautiful packer because my smoker cramped up.

Airflow and Ventilation

Why Vents and Dampers Matter
